Ishida is my personal current favorite for the chintan-style bowl. The off-menu special 80s Shoyu is excellent! Shuya Ramen -- soon-ish to open in the East 30s -- will probably be great (if the bowls are anything like the former Astoria location). Nakamura also does some nice chintan-style bowls.
